Instructions

  1. Mix fish sauce, sugar, chicken stock, and chili sauce in a small bowl

  2. In a wok or sauté pan, sauté garlic and jalapeños for 2–3 minutes.

  3. Add basil and scallions and sauté for 1 more minute.

  4. Mix cornstarch and cold water. Do this little at a time until the consistency is like heavy cream. Gently stir this mixture into the sauce, little at a time, until the desired consistency is reached. Discard any remaining cornstarch mixture.

  5. When the desired consistency is reached, simmer the mixture over low heat for 3-4 more minutes. This will cook out any taste or texture from the cornstarch.

  6. Serve alone over rice or with chicken, beef, or pork.
